All our meats are smoked with imported Hickory from the Ozark Mountains and Post Oak from Texas. We cook with stick burner offset smokers. (only firewood, no gas, no electricity) The fire needs to be tended by our pit crew constantly throughout the day and night. Regardless of the day, we strive for consistency over quality. Quality is what we hire for... consistency is what we train.

Our meat is also chosen with the same level of "nerdery" as the wood and flavors. For example, we buy only the high quality beef from Painted Hills Natural Beef out of Fossil, OR. We know the owners, sales managers, sales reps, ranchers, where the pack, how they pack, how they feed, etc. They also know what we want and need to supply a consistent product to our customers.

Matt davis - owner

Matt grew up on the BBQ of Central Kansas. With a degree in Wood technology, he has a developed eye for precision and a respect for the ‘scratch-made’. He spent 10 years nurturing a serious bbq hobby and dreaming of bringing the highest quality of bbq to Seattle. It wasn’t just the hickory smoked perfection of Kansas BBQ he missed, but the community that gathers around it. In 2014 he brought craft bbq with a culture of family to Seattle by way of a food truck. In 2016, he and James built their first brick and mortar restaurant. After being featured on Diners, Drive-ins, and Dives with Guy Fieri, the restaurant has continued to grow. He still has his eyes focused on consistency and preaches it daily.

James Barrington - Owner

James grew up in love with the city of Seattle and is always looking for ways to keep our culture fun and interesting. He is a huge fan of of street food and is the owner of Seattle’s first food truck, Hallava Falafel (June 2006) and another restaurant / food truck in Bread & Circuses. His roots are in Texas and he dreamed of bringing the culture of great bbq and community to Seattle. When James met Matt it was clear Seattle was about to get some really amazing bbq. James's motto is "make lives better". He continues to help our staff/family members accomplish their own personal goals.

Liz HIll - General Manager

Liz, also known as Liz. She enjoys stuff and things. She loves dogs. When she is not serving BBQ and driving the food truck you can find her riding her hog.
